Head Chef

We are currently looking for a Head Chef to join our busy kitchens, here at The Windmill Inn, Brascote!

The staff at the Windmill Inn focus hard on creating the environment, service and dining experience that we believe our customers have come to expect and enjoy since reopening our doors in 2012.

We are a successful pub/restaurant located in West Leicestershire with a fabulous reputation and serving modern but rustic British cuisine with a very specific style.

What we are looking for:

  • A calm & organised Head Chef who will motivate and lead the team & provide structured and progressive training for all

  • A Head Chef that can cook, taste & enjoy their food and will ensure great quality, consistent food to all of our guests

  • An experienced, well trained and enthusiastic catering professional who understands that a kitchen with flawless food hygiene standards and organisational systems will produce better food and better chefs

  • The ideal candidate will have a mixture of experience with a proven track record as Head Chef or a Senior Sous Chef

  • A knowledgeable Head Chef who takes pride in producing great quality fresh food and will work to ensure consistently high standards

  • Be hands on with your Sous and Line Chefs, developing them and inspiring them to become the Head Chef of the future

Waiter/Waitress

We are always on the lookout for Waiters/Waitresses that will embrace this role, and become part of our “family”, working as part of a tight-knit team. The Windmill and Reservoir Inns offer a unique opportunity to be part of a fun and friendly approach to dining.

The Waiter/Waitress role will involve staff in all front of house. Skill development will be ‘hands on’ and teamwork and cross training will be key to the candidates success.

The Ideal Candidate:

  • Previous experience useful but not essential.
  • Excellent level of spoken English

  • Numerate and literate

  • Flexible attitude and willingness to take on tasks as necessary

  • High standards with regards to personal appearance and hygiene

Sous Chef

We are currently recruiting for a Sous Chef to join our kitchen team. We are a popular pub restaurant business with two sites and a growing reputation.

Located in West Leicestershire and serving modern but rustic British cuisine with a very specific style we are looking for someone who will help to maintain our existing team's accomplishments.

What we are looking for:

  • The successful candidate must be driven, and be passionate about working with food.
  • The ability to work in a highly regarded establishment at a fast pace, is necessary.

    Duties:
  • Ensure that a high standard of preparations and presentation is achieved before any dish leaves the kitchen.

  • Oversees staff on the section, training on the job, and ensure that the section runs smoothly and efficiently.
  • Delegate staff in their duties and keep up standards in health, safety and hygiene.
  • Is generally alert for opportunities to improve the profitability of the section.
  • Reports any hygiene problems to the Senior Chefs.
  • Be constantly aware of new ideas and work with Head Chef in the creation of new dishes and menus.
  • Ensure that all food items are date stamped.
  • Maintain a high standard of discipline to reduce waste and accidents. Report all faults, errors, complaints and compliments to the Senior Chef on duty. To take charge of the kitchen occasionally in the absence of the Head Chef.
  • To carry out any reasonable request made by management.
  • To be flexible in the duties required of you, by assisting in other areas of kitchen management.
